Fresh n’ Zesty Zucchini Noodle Salad

Packed with crisp veggies, this ‘noodle’ salad is crunchy, refreshing and full of flavor.


  • 2 medium zucchini
  • ½-1 cup shredded red cabbage
  • ½ cup shredded carrots
  • 1 thinly sliced red bell pepper
  • 1 cup chopped broccoli
  • 2 chopped scallions

  • ½ cup creamy almond butter
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon maple syrup
  • ½ teaspoon grated ginger
  • ½ teaspoon sriracha
  • Pinch of salt
  • Chili flakes to taste


Spiralize the zucchini and mix vegetable ingredients in a bowl. Combine dressing ingredients in a small dish and mix well; add a teaspoon of water at a time to reach your desired consistency. Pour dressing over salad and toss. Refrigerate until ready to serve! This recipe is the perfect side dish or base for all your favorite summer protein recipes.
