Cucumber & Tomato Salad

Chop, stir and cool to make this easy and crisp side salad with cucumbers, onions and tomatoes.


  • 1 ½ pounds tomatoes, diced (about two cups)
  • 1 large cucumber, peeled (optional), halved, and thinly sliced (about two cups)
  • ½ large red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 1 ½ tablespoons balsamic vinegar
  • 1 teaspoon sugar
  • ⅔ cup crumbled feta (optional)
  • ½ teaspoon kosher salt or to taste
  • ¼ teaspoon freshly ground black pepper or to taste


Combine all the ingredients in a bowl; stir well to coat. Serve immediately or cover and refrigerate until ready to serve. Enjoy!
