Baked Zucchini Bites

Zucchini bites are perfect as a side or snack and great with ranch or marinara dipping sauce.


  • 2 zucchinis, cut into matchsticks
  • 2 tablespoon butter or olive oil
  • Salt & pepper to taste
  • ⅓ cup bread crumbs
  • 2 tablespoon Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley


Preheat your oven to 350˚F. Heat a medium/large skillet over medium heat and heat butter or oil. When hot, toss zucchini lightly in the pan to coat; add salt and pepper to your liking. Combine bread crumbs, Parmesan, oregano and parsley in a small bowl. Add about half of the bread crumb mixture to the pan and stir to lightly coat zucchini. Remove from the heat and transfer to a foil or parchment lined baking sheet; arrange in a single layer. Sprinkle the remaining bread crumb mixture evenly on top of the zucchini matchsticks. Bake for 15 minutes or to desired doneness. Serve as a side or snack; great with ranch or marinara dipping sauce.
