Texas Caviar


1 red onion, diced
1 red bell pepper, diced
1 or 2 jalapeños, optional, more or less depending on your taste, seeds removed and chopped finely (be careful not to touch the flesh or seeds)
1 tomato, diced
1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can black eyed peas, rinsed and drained
1 avocado, diced
3/4 cup corn (fresh, thawed frozen, or drained canned)
1/3 cup finely chopped cilantro leaves – optional
Juice of 1 lime
1/4 cup extra virgin olive oil
1 tsp sea salt
Fresh ground black pepper to taste

Whisk oil, lime, salt, and pepper together. Toss all of the other ingredients with the dressing. Serve as an appetizer with chips or as a delicious side dish.
