Grilled Cheese with Apples
Makes 4 sandwiches
8 slices bread (sourdough preferred)
4 tablespoons butter
2 tablespoons stone ground mustard
1 tablespoon fig or apple jam
8 slices sharp cheddar cheese, enough for 2 layers on 4 sandwiches
2 apples, cored and thinly sliced
8 slices thin bacon, cooked, optional
Butter each slice of bread on one side.
Combine mustard and jam. Spread on non-buttered sides of 4 slices of bread.
Top mustard spread with layer of cheese, apple slices, bacon and 2nd layer of cheese. Cover with second slice of bread, making sure buttered sides are facing out.
Grill sandwiches in preheated skillet (medium heat) or on griddle for about 2-3 minutes per side until golden brown and cheese has melted. Slice and serve while warm.
