Crispy Skin Baked Potato


Russet potato
Olive oil

Preheat your oven to 450º. Scrub the skin of your russet potatoes and dry with paper towel. Poke the potatoes several times all over with a fork. Rub lightly with olive oil and sprinkle with salt & pepper. Bake directly on the middle rack for 45 – 60 minutes, depending on the size and number of potatoes. Let stand for a few minutes, then cut down the middle and load with your favorite toppings and serve!
