Baked zucchini bites

Baked Zucchini Bites


2 zucchinis, cut into matchsticks.
2 tbsp butter or olive oil
Salt & pepper to taste
1/3 c bread crumbs
2 tbsp Parmesan cheese
1 tsp dried oregano
1 tsp dried parsley

Preheat your oven to 350. Heat a medium/large skillet over medium heat and heat butter or oil. When hot, toss zucchini lightly in the pan to coat, add salt and pepper to your liking. Combine bread crumbs, Parmesan, oregano and parsley into a small bowl. Add about ½ the bread crumb mixture to the pan and stir to lightly coat zucchini. Remove from the heat and transfer to a foil or parchment lined baking sheet, arrange in a single layer. Sprinkle the remaining bread crumb mixture evenly on top of the zucchini matchsticks. Bake for 15 minutes or to desired doneness. Serve as a side or snack, great with ranch or marinara dipping sauce.
