Prosciutto and Melon Skewers
Makes 20 skewers
Cantaloupe, Honeydew and/or Watermelon, cut into 1 inch cubes, or balled with a melon baller. 40 pieces total
¼ lb thinly sliced prosciutto, cut into 20 long strips
Balsamic vinegar or balsamic dressing (optional)
Fresh chopped parsley (optional)
On long toothpick skewers, thread a melon piece, a folded up piece of prosciutto, and a second melon piece. Drizzle with balsamic if using. Serve cold.
Variation – use small mozzarella balls instead of a second piece of melon.
Variation – slice melon thin and serve with prosciutto on lightly buttered toast.
