Crispy Skin Baked Potato

Ingredients

Russet potato
Olive oil
Salt
Pepper

Directions
Preheat your oven to 450º. Scrub the skin of your russet potatoes and dry with paper towel. Poke the potatoes several times all over with a fork. Rub lightly with olive oil and sprinkle with salt & pepper. Bake directly on the middle rack for 60 minutes. Let stand for a few minutes, then load with your favorite toppings and serve!
